Nitrites are an intermediate form of nitrogen, produced when ammonia isconverted into nitrate during the Nitrogen Cycle. As organic matterdecays, it produces ammonia. Highly toxic ammonia is converted intonitrite by bacteria, and the nitrite is converted into nitrate byanother bacteria.
